Chinese Fried Rice

 


*Ingredients*

  • 4 cups.. cooked and chilled white rice
  • 1 tablespoon...vegetable oil
  • 1/2 onion... chopped
  • 1 carrot...chopped
  • 1/2 cup...frozen peas
  • 1 egg... beaten
  • 2 tablespoons... soy sauce
  • 1 teaspoon...sesame oil
  • Salt and pepper to taste

Instructions:

  1. Heat the vegetable oil in a large wok or skillet over medium-high heat....
  2. Add the onion and carrot and cook, stirring occasionally...until softened, about 5 minutes....
  3. Add the peas and cook for 1 minute more.
  4. Push the vegetables to the side of the wok and add the egg. Scramble the egg until cooked through....
  5. Stir in the rice, soy sauce, sesame oil, salt, and pepper....
  6. Cook, stirring constantly, until the rice is heated through and coated in the sauce, about 2 minutes....
  7. Serve immediately....

Tips:

  • Use day-old rice for the best results. This will help the rice to separate and not clump together....
  • If you don't have a wok, you can use a large skillet. Just make sure to heat the skillet over high heat before adding the oil....
  • Add your favorite vegetables to the fried rice. Some other good options include broccoli.. mushrooms...or bell peppers.
  • Adjust the amount of soy sauce to taste. You may want to start with a smaller amount and add more if needed...
  • Serve the fried rice immediately with your favorite dipping sauce....
