Crispy Calamari Rings
Ingredients:
- 1 pound cleaned squid, sliced into rings
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper, optional
- 1/4 cup vegetable oil, for frying

- In a medium bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and cayenne pepper.
- Pat the squid rings dry with paper towels.
- Dip the squid rings in the flour mixture, coating them evenly.
- Shake off any excess flour.
- Heat the oil in a large skillet or deep fryer over medium heat until it reaches 350 degrees F.
- Fry the squid rings in batches for 2-3 minutes per side, or until golden brown and cooked through.
- Drain the squid rings on paper towels.
- Serve immediately with your favorite dipping sauce.
Tips:
- To tenderize the squid, soak it in milk for 30 minutes before frying.
- Make sure the oil is hot enough before frying the squid, otherwise it will be tough and chewy.
- Don't overcrowd the pan when frying the squid, or the temperature of the oil will drop and the squid will not cook evenly.
- Serve the squid immediately with your favorite dipping sauce, such as marinara sauce, cocktail sauce, or lemon wedges.
