Grilled Chicken Breast with chillies and lemon grass
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 lemongrass stalk, white part only, finely chopped
- 1 red chili, seeded and finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the lemongrass, chili, garlic, fish sauce, lime juice, olive oil, salt, and pepper.
- Add the chicken breasts to the marinade and toss to coat.
- Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
- Preheat your grill to medium heat.
- Remove the chicken from the marinade and grill for 5-7 minutes per side, or until cooked through.
- Serve immediately.
Tips:
- For a stronger lemongrass flavor, grate the lemongrass instead of chopping it.
- If you don't have lemongrass, you can substitute with 1 teaspoon of lemon zest and 1/2 teaspoon of ground ginger.
- If you like your chicken spicier, add more chili to the marinade.
- Serve the chicken with your favorite sides, such as rice, vegetables, or noodles.
