Grilled Chicken Breast with chillies and lemon grass

 




Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 lemongrass stalk, white part only, finely chopped
  • 1 red chili, seeded and finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the lemongrass, chili, garlic, fish sauce, lime juice, olive oil, salt, and pepper.
  2. Add the chicken breasts to the marinade and toss to coat.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
  4. Preheat your grill to medium heat.
  5. Remove the chicken from the marinade and grill for 5-7 minutes per side, or until cooked through.
  6. Serve immediately.

Tips:

  • For a stronger lemongrass flavor, grate the lemongrass instead of chopping it.
  • If you don't have lemongrass, you can substitute with 1 teaspoon of lemon zest and 1/2 teaspoon of ground ginger.
  • If you like your chicken spicier, add more chili to the marinade.
  • Serve the chicken with your favorite sides, such as rice, vegetables, or noodles.
