Herb and Bacon scones
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup cold unsalted butter, cut into small pieces
- 1/2 cup grated cheddar cheese
- 1/4 cup chopped fresh herbs (such as chives, thyme, and rosemary)
- 1/2 cup cooked and crumbled bacon
- 1 egg, lightly beaten
- 1/2 cup milk
Instructions:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the butter and use your fingers or a pastry blender to work it into the flour until the mixture resembles coarse crumbs.
- Stir in the cheese, herbs, and bacon.
- In a small bowl, whisk together the egg and milk.
- Add the egg mixture to the dry ingredients and stir just until combined.
- Turn the dough out onto a lightly floured surface and knead lightly for 1-2 minutes, or until just smooth.
- Pat the dough out into a 6-inch circle.
- Cut the dough into 8 wedges.
- Place the scones on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Serve warm or at room temperature.
Tips:
- For a more rustic scone, don't overwork the dough.
- If you don't have fresh herbs, you can use 1 teaspoon of dried herbs.
- You can also add other ingredients to the scones, such as chopped scallions, sun-dried tomatoes, or grated Parmesan cheese.
