Herb and Bacon scones

 


Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/2 cup grated cheddar cheese
  • 1/4 cup chopped fresh herbs (such as chives, thyme, and rosemary)
  • 1/2 cup cooked and crumbled bacon
  • 1 egg, lightly beaten
  • 1/2 cup milk

Instructions:

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Add the butter and use your fingers or a pastry blender to work it into the flour until the mixture resembles coarse crumbs.
  4. Stir in the cheese, herbs, and bacon.
  5. In a small bowl, whisk together the egg and milk.
  6. Add the egg mixture to the dry ingredients and stir just until combined.
  7. Turn the dough out onto a lightly floured surface and knead lightly for 1-2 minutes, or until just smooth.
  8. Pat the dough out into a 6-inch circle.
  9. Cut the dough into 8 wedges.
  10. Place the scones on a baking sheet lined with parchment paper.
  11. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  12. Serve warm or at room temperature.

Tips:

  • For a more rustic scone, don't overwork the dough.
  • If you don't have fresh herbs, you can use 1 teaspoon of dried herbs.
  • You can also add other ingredients to the scones, such as chopped scallions, sun-dried tomatoes, or grated Parmesan cheese.
