Mutton Curry Recipe
Ingredients:
- 1 kg mutton, cut into medium-sized pieces
- 1 teaspoon turmeric powder
- 1 tablespoon salt
- 1/2 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 tablespoon oil
- 1 bay leaf
- 2 green cardamoms
- 1 inch cinnamon stick
- 4 cloves
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- 1 cup water
- 1/2 cup chopped cilantro, for garnish
Instructions:
- In a large bowl, combine the mutton, turmeric powder, salt, and yogurt. Mix well to coat the meat. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
- Heat the oil in a large pot or Dutch oven over medium heat. Add the bay leaf, cardamoms, cinnamon stick, cloves, cumin seeds, and coriander seeds. Cook, stirring occasionally, for 1 minute, or until fragrant.
- Add the ginger-garlic paste and cook, stirring constantly, for 30 seconds, or until fragrant.
- Add the red chili powder and garam masala powder. Cook, stirring constantly, for 30 seconds, or until fragrant.
- Add the marinated mutton to the pot. Stir to coat the meat in the spices.
- Add the water and bring to a boil. Reduce heat to low, cover, and simmer for 1-2 hours, or until the meat is tender.
- Garnish with cilantro and serve hot with rice or naan.
Tips:
- You can use any type of mutton you like, but lamb shoulder is a good choice.
- If you don't have time to marinate the mutton, you can skip that step, but the curry will be more flavorful if you do.
- You can adjust the amount of chili powder to your liking. If you don't like spicy food, you can use less chili powder.
- If you want a thicker gravy, you can add a little cornstarch or flour to the curry.
