Smoked Kidney Bean salad
Ingredients:
- 1 cup cooked smoked kidney beans, drained and rinsed
- 1/2 cup chopped red onion
- 1/2 cup chopped celery
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped green bell pepper
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh parsley, for garnish (optional)
Instructions:
- In a large bowl, combine the kidney beans, red onion, celery, red bell pepper, and green bell pepper.
- In a small bowl, whisk together the olive oil, lemon juice, smoked paprika, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Garnish with chopped fresh parsley, if desired.
- Serve immediately or chill for later.
Tips:
- For a more flavorful salad, use home-cooked smoked kidney beans. If you don't have time to cook your own, you can use canned smoked kidney beans, but be sure to rinse them well before using.
- You can add other vegetables to this salad, such as chopped carrots, cucumbers, or tomatoes.
- This salad is also a great way to use up leftover cooked vegetables.
- Store the salad in an airtight container in the refrigerator for up to 3 days.
