Smoked Kidney Bean salad

 



Ingredients:

  • 1 cup cooked smoked kidney beans, drained and rinsed
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. In a large bowl, combine the kidney beans, red onion, celery, red bell pepper, and green bell pepper.
  2. In a small bowl, whisk together the olive oil, lemon juice, smoked paprika, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Garnish with chopped fresh parsley, if desired.
  5. Serve immediately or chill for later.

Tips:

  • For a more flavorful salad, use home-cooked smoked kidney beans. If you don't have time to cook your own, you can use canned smoked kidney beans, but be sure to rinse them well before using.
  • You can add other vegetables to this salad, such as chopped carrots, cucumbers, or tomatoes.
  • This salad is also a great way to use up leftover cooked vegetables.
  • Store the salad in an airtight container in the refrigerator for up to 3 days.
