Spinach and chicken macaroni
Ingredients:
- 12 ounces elbow macaroni
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10-ounce) package frozen spinach, thawed and squeezed dry
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
Instructions...
- Cook the macaroni according to the package directions.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chicken, salt, and pepper and cook until browned on all sides.
- Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in the spinach and cook until wilted, about 2 minutes.
- Drain the macaroni and add it to the skillet with the chicken and spinach.
- Stir in the Parmesan cheese and milk until the cheese is melted and the sauce is smooth.
- Serve immediately.
Tips:
- For a creamier sauce, add 1/4 cup of heavy cream along with the milk.
- If you don't have Parmesan cheese, you can use any other type of hard cheese, such as cheddar or Gruyère.
- You can also add other vegetables to this dish, such as mushrooms, broccoli, or bell peppers.
