Spinach and chicken macaroni

 



Ingredients:

  • 12 ounces elbow macaroni
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk

Instructions...

  1. Cook the macaroni according to the package directions.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chicken, salt, and pepper and cook until browned on all sides.
  3. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the spinach and cook until wilted, about 2 minutes.
  5. Drain the macaroni and add it to the skillet with the chicken and spinach.
  6. Stir in the Parmesan cheese and milk until the cheese is melted and the sauce is smooth.
  7. Serve immediately.

Tips:

  • For a creamier sauce, add 1/4 cup of heavy cream along with the milk.
  • If you don't have Parmesan cheese, you can use any other type of hard cheese, such as cheddar or Gruyère.
  • You can also add other vegetables to this dish, such as mushrooms, broccoli, or bell peppers.
